J'ai acheté il y a quelques temps au K- mart de la rue St Anne (le Tokyotown de Paris ! ) du kinako qui est une poudre de soja au bon gout de biscuit ; c'est un aliment extraordinaire que j'utilise souvent en patisserie et ici en mode biscuit qui convient parfaitement à la pomme verte et en style Fantastik pour une presentation toujours élégante !

Pate sablée
90g de beurre mou
1g de sel
35g de sucre glace
60g de farine
1 cercle de 20 cm
Chauffer le four à th 180°
Dans le bol du mixer verser tous les ingrédients et utiliser la feuille pour obtenir une pate à étaler.
Etaler avec une spatule coudée dans le cercle beurré et posé sur une feuille de papier cuisson .
Cuire 10 minutes.
Sortir du four et laisser refroidir le temps de préparer le biscuit Marigny.
Pour le biscuit Marigny au Kinako
70g de blancs d'oeufs
15 g de kinako (poudre de soja au gout biscuité)
15g de fécule de pomme de terre
70g de sucre semoule
65g de jaune d'oeufs
30g de beurre
Mettre les blancs à température ambiante ; tamiser le kinako la fécule et la farine ; monter les blancs en neige avec un tiers du sucre au départ puis ajouter les deux tiers au fur et à mesure ; ajouter ensuite les jaunes en réduisant la vitesse ; finir de mélanger à la maryse en ajoutant les poudre puis le beurre fondu. Verser cette pâte sur la pâte sablée refroidie et remettre à cuire 10 minutes.
Sortir du four et laisser refroidir.
Confit pomme verte (à faire la veille)
100g purée pomme verte
10g de glucose
1g de pectine NH
Faire bouillir tous les ingrédients pendant 2 minutes.
Verser dans une empreint silicone puis direction le fridge pour au moins une nuit
Mousse pomme verte
200g de purée de pomme verte
2 jaunes d’œufs
60g de sucre
2 feuille de gélatine
20 cl de creme fleurette
Réhydrater la gélatine.
Faire chauffer la purée de pomme verte ; arrêter après un premier bouillon ; ajouter hors du feu le jaune d’œuf ajouter la gélatine essorée.
Monter la creme fleurette en chantilly pas trop ferme
Ajouter à la préparation précédente bien mélanger
Verser la préparation dans un moule flexiplan de 16cm de diamètre au deux tiers ; démouler le confit de pomme vertes le poser sur la mousse et recouvrir avec le reste de mousse et direction le congélateur pour une nuit.
Glacage
45 g d'eau
100 g de sucre
100 g de sirop de glucose
3 feuilles de gélatine (de 2 g chacune)
75 g de lait concentré
100 g de chocolat blanc
Colorant vert pomme
Mettre la gélatine à ramollir dans de l'eau froide.
Faire chauffer l'eau, le lait concentré, le sirop de glucose et le sucre dans une casserole.
Porter à ébullition.
Ajouter sur le chocolat blanc et mélanger. Mixer au mixer plongeant
Puis hors du feu la gélatine essorée.
Verser ce mélange sur la mousse congelée démoulée sur une grille et bien l’étaler uniformément avec la spatule coudée.
Replacer la mousse recouverte de glaçage sur le biscuit kinako pour une décongélation lente au fridge.
GREEN APPLE FANTASTIK
Pate sablée
90g soft butter
1g salt
35g icing sugar
60g flour
1 cycle of 20 cm

Remove from oven and let cool.
confit green apple
100g green apple puree
10g glucose
1g of pectin NH
Boil all ingredients for 2 minutes.
Cool in a bowl then towards the fridge for at least two hours
Green apple mousse
200g of green apple purée
2 egg yolks
60g of sugar
2 gelatin sheets
20 cl of whipped cream
Rehydrate the gelatin.
Heat the green apple purée; stop after a first boil; add the egg yolk off the heat and add the drained gelatin.
Whisk the creme fleurette in Chantilly not too firm
Add to the previous preparation mix well
Pour the preparation in a flexiplan mold of 16cm in diameter to two thirds; unmold the green apple confit place it on the mousse and cover with the rest of mousse and direction the freezer for one night.
Icing
45 g of water
100 g of sugar
100 g glucose syrup
3 sheets of gelatin (2 g each)
75 g of condensed milk
100 g of white chocolate
Apple green dye
Put the gelatin to soften in cold water.
Heat the water, condensed milk, glucose syrup and sugar in a saucepan.
Bring to a boil.
Add on the white chocolate and mix. Mixing with the mixer
Then add of the heat the drained gelatin
Pour this mixture on the frozen mousse removed from a rack and spread it evenly with the bent spatula.
Replace the frosted mousse on the kinako biscuit for slow defrosting in the fridge.
