Choux citronnelle
20 pièces
Chantilly vanille
55g de chocolat blanc râpé
80g de crème liquide chaude
80g de crème liquide froide
1 feuille de gélatine
1 pincée de vanille en poudre
Tremper la gélatine dans de l’eau froide.
Faire chauffer la crème puis ajouter hors du feu la gélatine essorée et la poudre de vanille.
Verser la crème chaude sur le chocolat râpé ; bien mélanger et ajouter la crème froide. Passer à la passette. Réserver au fridge une nuit.
Le lendemain la monter en chantilly.
Craquelin
38g de beurre
45g de farine
45g de sucre
Mélanger les ingrédients dans le robot avec la feuille puis étaler entre deux feuilles de papier sulfurisé sur 2 mm ; laisser 1 heure au fridge
Pâte à choux
2,5g de sel
2g de sel
100g d’eau
90g de lait
85g de beurre
115g de farine
3 œufs
Faire chauffer le lait et l’eau avec le sel et le sucre ; puis ajouter le beurre en morceaux.
Quand le beurre est fondu ajouter hors du feu la farine d’un coup. Bien mélanger et remettre sur le feu tout en séchant la pâte dans la casserole avec une spatule en bois.
Mettre dans le bol du mixer puis ajouter un à un les œufs après que chacun est absorbé .Verser dans une poche à douille 10. Pocher des choux sur une plaque avec 4cm d’espace entre chaque chou.
Sortir le craquelin , faire des petits disques avec un emporte pièce et les poser sur chaque chou poché.
Enfourner th 190 pendant 30 min (surveiller selon le four).
Sortir les choux pour les refroidir.
Crème pâtissière
200g de lait
50g d sucre
50g de jaune d’œufs (2)
20g de maïzena
2 bâtons de citronnelle
65g de beurre en petits morceaux
Porter le lait à ébullition ; y faire infuser la citronnelle coupée en petits tronçons pendant 15 min . Passer au chinois.
Faire une crème pâtissière : fouetter les œufs le sucre et la maïzena ; ajouter le lait parfumé ; remettre dans la casserole et mélanger à la spatule jusqu’à épaississement. Ajouter le beurre puis mixer. Laisser refroidir avec un film plastique sur la crème.
Crème légère à la citronnelle
Ajouter la crème pâtissière froide et la chantilly puis mettre dans une poche à douille cannelée.
Service
Fendre les choux par le haut ; pocher la crème légère puis remettre le chapeau du chou et au moment du service saupoudrer de sucre glace.
Lemongrass Puffies
20 pieces
Chantilly vanilla
55g of grated white chocolate
80g of hot liquid cream
80g of cold liquid cream
1 sheet of gelatin
1 pinch of vanilla powder
Dip the gelatin in cold water.
Heat the cream and add the spun gelatin and the vanilla powder off the heat.
Pour the hot cream over the grated chocolate; mix well and add the cold cream. Drain. Reserve in the fridge one night.
The next day whip the cream into a chantilly
Cracker
38g of butter
45g of flour
45g of sugar
Mix the ingredients in the robot and spread between two sheets of parchment paper on 2 mm; leave 1 hour in the fridge
Choux pastry
2.5g of salt
2g of salt
100g of water
90g of milk
85g of butter
115g of flour
3 eggs
Heat the milk and water with salt and sugar; then add the butter in pieces.
When the butter is melted, add in one shot the flour off heat. Mix well and put back on the heat while drying the dough in the pan with a wooden spatula.
Put in the bowl of the mixer then add one by one the eggs after each egg is absorbed. Pour into a pastry bag. Poach the choux pastries on a plate with 4cm of space between each chou pastry.
Remove the cracker, make small discs with a cookie cutter and put them on each chou.
Bake at 190°C for 30 min (watch out according to the oven).
Remove the choux pastries and let them cool.
Custard
200g of milk
50g of sugar
50g of egg yolk (2)
20g of cornflour
2 sticks of lemongrass
65g butter in small pieces
Boil the milk ; add lemongrass cut in small pieces for 15 minutes. Let infuse. And then drain.
Make a pastry cream: whisk eggs with sugar and cornflour; add the lemongrass perfumed milk; put back in the pan and mix with a spatula until thickened. Add the butter and mix. Cool with a plastic film on the cream.
Light cream with lemongrass
Add the cold custard cream and whipped cream and put in a pastry bag.
Service
Split the choux pastries upwards; add the light cream and put the chou cap back on and at the time of serving sprinkle with icing sugar.
