Chouette et pour commencer la saison 2011 attention c'est du lourd, de la bloggeuse qui en connaît un rayon au niveau cuisine et à qui on ne la refait pas ! des posts quotidiens pour une cuisine inspirée et des coups de gueule quand il y en a besoin ! Merci Mamina de bien avoir voulu te prêter au jeu des duos : on prend une recette d'un chef et c'est parti pour l'impro chacun de son côté pour poster le même jour, même heure ;
Nous avons choisi le chef Stéphane Rétif et le restaurant D'Antan Sancerrois , direction la bonne ville de Bourges !
Pas de concours pas de lot à gagner juste le plaisir de s'amuser fraternellement ! alors allez voir de suite ce que nous a concocté Mamina c'est ici !!

Recette inspirée du chef Stéphane Rétif
Préparer la crème anglaise et le cœur fondant au moins 24 heures à l’avance.
Pour 6 personnes :
Pour la crème anglaise :
½ litre de lait
5 jaunes d’œufs
125 g de sucre
10g de poudre de Nescafé
1 lichette de whisky
Pour les croustillants :
6 feuilles de pâte à filo
50 g de beurre fondu
Appareil 1 :
250 g de chocolat au lait râpé ou en pistoles
125 g de lait
65 g de crème liquide
Appareil 2 :
3 œufs
50 g de beurre
65 g de farine
La crème au café:
Porter le lait à ébullition avec la poudre de café.
Pendant ce temps, blanchir les jaunes et le sucre. Verser le lait en filet sur ce mélange puis cuire sans cesser de remuer et sans laisser bouillir. Lorsque la crème nappe la cuillère, enlever la casserole du feu, remuer encore une minute . Filmer au contact puis laisser refroidir avant de réserver au froid.
Quand c'est bien froid ajouter 1 coup de whisky.
Les croustillants :
Appareil 1 :
Porter la crème et le lait à ébullition, couper le feu et verser le chocolat Remuer pour avoir une crème homogène.
Appareil 2 :
Mixer les 3 ingrédients, passer au chinois et ajouter dans le premier appareil.
Laisser refroidir et réserver au frigo 24 heures.
Finition :
Préchauffer le four à 240°.
Déposer un boudin d’appareil au chocolat (3-4 cuillerées à soupe) dans une feuille de filo, rouler pour former un cigare en fermant les extrémités et coller avec du beurre fondu.
Badigeonner à nouveau de beurre fondu, saupoudrer de sucre roux et passer au four 4 à 5 minutes.
Caraméliser éventuellement au chalumeau.
Verser la creme anglaise dans l'assiette . déposer les cigares sur le bord saupoudrer de chocolat amer.

I start the 2011duet season with Mamina a VIP food blogger in France ; she must have been one of the first to create her foodblog and she is now an Internet star ! Thank you Mamina to play the game with me !!
I remind you, dear reader, what the duets are : my food partner and I choose a chef and take the title of one his/her recipe ;and after we work on our own to create our own interpretation of that recipe ; we post the same day and we discover what the other has posted ! you can see on my blog other duets with other food bloggers (on the right part of the blog) , this is really a great fun !
We have chose the chef Stéphane Rétif from the restaurant "D'Antan Sancerrois" located in Bourges right in the centre of France !

For 6 persons:
For the custard:
½ liter of milk
5 egg yolks
125 g sugar
10g of Nescafe powder
A lick of whiskey
For the chocolate crisp:
6 sheets of filo dough
50 g butter, melted
Unit 1:
250 g of milky chocolate
125 g milk
65 g cream
Unit 2:
3 eggs
50 g butter
65 g flour
The coffee custard :
Bring the milk to a boil with the coffee powder.
Meanwhile, wisk the yolks and sugar. Pour the milk-coffee mixture gently on the beaten yolks and cook , stir but do not boil. When the custard looks thickern, remove from heat, stir one more minute. Cover with a transparent film and let cool before chill.
When it is cold add 1 shot of whiskey.
The crispy:
Unit 1:
Bring cream and milk to a boil, turn off the heat and pour chocolate Stir to have a smooth cream.
Unit 2:
Mix the 3 ingredients, strain through a drainer and add in the first unit .
Cool and refrigerate 24 hours.
Finish:
Preheat oven to 240 degrees.
Place a line of chocolate dough in a sheet of phyllo, roll to form a cigar by closing the ends and stick with melted butter.
Brush again with melted butter, sprinkle with brown sugar and bake in the oven 4-5 minutes.
Eventually caramelize with a blowtorch.
Pour the custard into the dish. drop the cigar on the edge of the plate and sprinkle bittersweet chocolate.
