APPLE SWING AND “BORDEAUX” ESPUMA

No? uh,..I think he will be your new friend ...
He just proved that women prefer men with big and expensive cars....
To come to that "hasty" conclusion he showed to women aged from 21 to 40 two photos of men : one sitting close to a Bentley Continental, the other one sitting next to a Ford Fiesta ....
Bingo!! ... they found the first one the most attractive by putting
forward some“protecting” and “reproductive” criteria...? it is well known : it shelters more than one family in a Bentley than a Fiesta!
Too bad because at the same time another article comes with the follwoing headlines : "Men do not like any more large cars” !!
Yes this is the crisis and the men choices are based now on the car
price and fuel savings (well yes that's true we all know we can sacrifice ourselves to save money!!!..)
Then who to believe? Men or women?
Today in Pierre Cuisine no cars involved but another “toy” from the playground: let’s play with the Apple swing ... and enjoy!
for 4 people
1 golden apple per person
1 pastry puff (pâte feuilletée) of very good quality
1 cannelé from Bordeaux to be replaced by a sponge cake, Vanilla pod and 1 spoon of old rhum (purists will kill me!)
20 cl whole cream
10cl whole milk
The Swing Puff
Cut the pastry into rectangles of size approximately 12X5cm.
Heat oven to 180 ° C th, place the rectangles on a cooking sheet of paper and on top of it you need to put some weight so that the pastry do not rise too much ; cook during 10 mn
Peel and cut apples into cubes, sauté them in a skillet with butter and a little bit sugar until caramelized and then put aside.
The Bordeaux espuma
The day before boil the cream and milk with the sponge cake previously cut into small pieces the vanilla pod and the rhum . Let it stand for a while at room temperature.
Then let stand overnight in the fridge so that the liquid absorbs
the flavour of rhum and vanilla.
The day after mix everything and add a little cold milk for a fluid
liquid ; Drain the preparation , pour into the siphon and let it cool in the fridge I always insert the gaz cartridge just at the time of service : for me it works like that : do not ask me
Insert a cartridge into the siphon , shake it like Tom Cruise in "Cocktail" !!!
Place the tepid apples in the service plate, play with the puff
pastry to have a "swing"; on the lower side put a touch of espuma.
Now, press all your strength on the top of the swing and try to swallow the espuma opening wide your mouth (uh… no I am kidding here don’t you dare?!!! no noooooo... !!!)
For my English speaking friends the “cannelé” is a small cake from
Bordeaux with vanilla and old rhum aromas ; it is cooked in fluted- shaped moulds; fluted in French is translated as “cannelé” hence the name !
Visit Bordeaux ... it is now a beautiful city !!!
