J'avoue qu'à la lecture de la recette de glace au foin aller chercher dans un rayon animalerie un ingrédient ça m'a un peu refroidi ! et puis ensuite devant le paquet de foin j'y vais ou jy vais pas !!! Bonne pioche la glace a un parfum extra d'odeur de terre humide indéfinissable et avec la rhubarbe l'association était tip top !! Et on peut faire confiance à Florent Ladeyn jeune chef plein d'avenir !

Glace au foin (tiré du livre de recette de Florent Ladeyn)
à faire la veille
300g de lait entier
100g de crème fleurette
1 poignée de foin (acheté au rayon animalerie de votre supermarché)
80 g de sucre
3 jaunes d'oeufs
faire chauffer le lait et la crème verser dans un bol et ajouter le foin ; filmer et laisser infuser 3 heures à température ambiante.
Passer et presser le foin ; réchauffer l'infusion ; battre les oeufs et le sucre ; ajouter avec une cuilller en bois le liquide parfumé au foin ; faire une crème anglaise ; laisser refroidir et direction le fridge pour une nuit.
Pate à tarte sucrée
100 g de farine
20 g de sucre glace
60 g de beurre
Faire une pate brisée avec tous les ingrédients ; laisser reposer la pate au fridge pour une heure et foncer 5 à 6 petits cercles à patisserie ; remettre au frais pour une heure .
cuire à blanc à four th 8 chaleur tournante pour 10 à 12 minutes ; laisser refroidir.
Rhubarbe
Couper une botte de rhubarbe en tronçons ; leur ajouter deux cuillères à soupe de sucre dans un plat à gratin et enfourner à th 8 pendant 10 à 12 minutes : prendre cette compote la mettre dans une passoire et égoutter pendant une heure ; récupérer le jus.
réhydrater deux feuilles de gélatine dans de l'eau froide ; réchauffer le jus de rhubarbe ; ajouter la gélatine essorée. attendre la prise de gelée.
Montage
Sur un fond de tartelette mettre deux cuillères de compote de rhubarbe en faisant une bosse ; napper de jus gélifié de rhubarbe .
Service
1 heure avant turbiner la glace au foin.
Servir les tartes avec la glace au foin (j'ai mis 1 shortbread écrasé sous la glace ).
HAY FLAVOUR ICE CREAM AND RHUBARB TART
Ice hay flavour (from the recipe book Florent Ladeyn)

300g whole milk
100g whipping cream
1 handful of hay (bought at pet shop store or in your supermarket)
80g sugar
3 egg yolks
Heat the milk and cream pour into a bowl and add the hay; cover with film plastic and leave to infuse for 3 hours at room temperature.
Press hay and heat the infusion; Beat eggs and sugar; add with a wooden cuilller the hay flavour liquid; make a custard; cool and direction to the fridge for a night.
Dough
100 g flour
20g icing sugar
60 g of butter
Mix all with all the ingredients and add water and shape a ball ; Let the dough rest in fridge for an hour and mould for 5-6 small circles pastry; back cool for an hour.
cook the dough in convection oven 8 th to 10 to 12 minutes; cool.
Rhubarb
Cut a bunch of rhubarb into chunks; add two tablespoons of sugar in a baking dish and bake at 8 th for 10 to 12 minutes: take this purée put in a colander and drain for one hour; collect the juice.
rehydrate two gelatin sheets in cold water; warm rhubarb juice; add the softened gelatine. Wait until it starts to get jelly.
Put two spoons of stewed rhubarb on the tarts and shape cover with the juicy jelly of rhubarb.
Service
One hour before make the hay ice cream in the ice making machine .
Serve the rhibarb tart with ice hay (I put one under the ice crushed shortbread).
