Fantastik poire pistaches
Crème onctueuse à la poire (à faire la veille)
120g de purée de poire
2 œufs
60g de sucre
1 feuille de gélatine
70g de beurre doux
Réhydrater la gélatine.
Fouetter les œufs avec le sucre
Faire chauffer la purée de poire ; arrêter après un premier bouillon ; ajouter hors du feu le mélange précédent et remettre sur le feu jusqu’au début de l’épaississement.
Hors du feu ajouter la gélatine essorée.
Ajouter le beurre et mixer au mixeur plongeant.
Verser la préparation dans un moule et direction le congélateur.
Pate sablée
90g de beurre mou
1g de sel
35g de sucre glace
80g de farine
1 cercle de 20 cm
Chauffer le four à th 180°
Dans le bol du mixer verser tous les ingrédients et utiliser la feuille pour obtenir une pate à étaler.
Etaler avec une spatule coudée dans le cercle beurré et posé sur une feuille de papier cuisson .
Cuire 10 minutes.
Sortir du four et laisser refroidir le temps de préparer le biscuit Marigny.
Pour le biscuit Marigny aux pistaches
70g de blancs d'œufs
15 g de pistaches en poudre
15g de fécule de pomme de terre
70g de sucre semoule
65g de jaune d'œufs
30g de beurre
Quelques pistaches entières
Mettre les blancs à température ambiante ; tamiser la poudre de pistaches la fécule et la farine ; monter les blancs en neige avec un tiers du sucre au départ puis ajouter les deux tiers au fur et à mesure ; ajouter ensuite les jaunes en réduisant la vitesse ; finir de mélanger à la maryse en ajoutant les poudres, les pistaches entières puis le beurre fondu. Verser cette pâte sur la pâte sablée refroidie et remettre à cuire 10 minutes.
Sortir du four et laisser refroidir.
Chantilly vanille
20 cl de crème fleurette
70 g de crème philadelphia
1 pincée de poudre de vanille
Monter tous les ingrédients en chantilly et verser dans une poche à douille .
Faire de petites gouttes de chantilly autour de la crème onctueuse de poire.
Servir bien frais
PEAR CREAM PISTACCIO CAKE AND VANILLA CHANTILLY
Pear smooth cream (to be done the day before)
Pear puree 120g
2 eggs
Sugar 60g
1 sheet gelatin
70g unsalted butter
Rehydrate the gelatin.
Whisk eggs with sugar

Add butter and mix in blender.
Pour into a silicon mold and let cool in the freezer
Pate sablée
90g soft butter
1g salt
35g icing sugar
80g flour
1 cycle of 20 cm
Heat oven to 180 ° th
In the bowl of the mixer pour all ingredients thread to get a dough to spread.
Spread with a bent spatula into the buttered pastry circle and placed on a sheet of baking paper.
Cook 10 minutes.

70g egg whites
15 g of pistaccio in powder
corn starch 15g
Caster sugar 70g
65g of egg yolk
30g butter
A few pistaccios
Set the whites at room temperature; Sift pistaccio powder starch and flour; whip the egg whites with a third of sugar at the starting then add two-thirds; then add the yolks by reducing the speed; finish mixing with a spatula and then adding the powders tjhe pistaccios and the melted butter. Pour the batter over the cooled pastry and cook for 10 minutes.
Remove from oven and let cool.
3 hours before service, un mold the frozen pear cream and put it on the cooked pistaccio biscuit. ; let thaw for 3 hours.
Chantilly vanilla
20 cl whipping cream
70 g of philadelphia cream
A pinch of vanilla bean powder
Assemble all ingredients and whisk in the blender pour into a pastry bag.
Make nice little drops of chantilly cream around the Rapsberry cream.
Serve chilled
